A Dallas Favorite Olōyō Opens Permanent Home with Masa-Driven Mexican Cuisine

Dallas’ ever-evolving food scene gained another highly anticipated Mexican restaurant, Olōyō, which opened at 4422 Gaston Avenue on Tuesday, May 26, 2026.

The intimate 23-seat restaurant in Old East Dallas, owned by James Beard Award semifinalist Chef Olivia López and Jonathan Percival, offers a modern approach to Mexican cuisine.

The celebrated pop-up took over a historic space on Gaston Avenue, creating an elevated Mexican concept that features heirloom corn, regional Mexican cooking, and immersive dining experiences.

Over the past several years, Olōyō built a devoted following across Dallas through pop-ups, private dinners, and collaborative culinary events. The small operation began producing tamales and heirloom tortillas and evolved into one of the city’s most respected underground dining concepts, with a deeply rooted approach to Mexican gastronomy.

The culinary program launches with an evolving à la carte menu showcasing dishes such as Rosewood Ranches Wagyu brisket sopes, rich enmoladas topped with sweet Colima-style mole, and grilled vermillion snapper. A multi-course chef’s tasting experience is expected to debut at a later date.

Leading the beverage program, Beverage Director Jose Gonzalez brings a technique-focused approach to cocktails, highlighting regional spirits and complex flavor combinations. Signature drinks include the Jefa, a vibrant mix of tequila and hibiscus, alongside Agua Picada, a rum-based cocktail inspired by the creamy, cinnamon-forward flavors of horchata.
