From Beats to Bites: Dulce Nina Brings Authentic Mexican Flavor and Music to the Cedars

New Latin icehouse that combines authentic Mexican with a musical twist launches on Ervay Street this week.

It all came to be like this. The talented Vo Singhal wears many different hats. He’s a realtor by day, DJ by night, and now, a culinary entrepreneur. His love for music and food sparked an amazing restaurant and entertainment idea: a food truck that could double as a mobile DJ stage, blending bold flavors with energetic beats.

That idea took shape when Singhal met Jorge Castellanos, a talented Mexican chef juggling multiple jobs in Dallas’ service industry. The two quickly clicked and spent hours developing a shared vision — a food truck that delivered authentic Mexican dishes while setting the vibe for any celebration and at any location.

In 2017, their concept, Tacos, Bites & Beats, hit the streets, starting with weekend appearances at Harry Hines Bazaar. Its popularity skyrocketed, leading them to appearances at local breweries, private events, weddings, and even a catering gig for the Dallas Mavericks. The menu kept things classic and craveable: tacos, burritos, quesadillas, elote, in addition to cold craft beer and bold margaritas.

The duo wanted more permanency. Three years ago, they began planning a permanent home for their culinary and musical vision. The result is Latin icehouse Dulce Nina — named after the first names of their wives — a unique outdoor venue nestled on Ervay Street in the Cedars.

Transforming an old car battery warehouse into a welcoming, open-air space was no easy feat, with multiple redesigns, unexpected delays, and endless planning sessions. But after years of persistence, Dulce Nina is finally ready to open its doors the week of April 21st.

The menu features a curated selection of classic and contemporary cocktails, craft beers, and fine wines, accompanied by a rotating array of gourmet dishes. The joint will host live music events, art shows, and community gatherings.

With an expansive patio and backyard setup, the venue offers a casual, festive vibe. There’s no traditional kitchen here. Instead, a central bar is surrounded by a trio of food trucks, including the original Tacos, Bites & Beats and an exciting new global fusion truck led by rising culinary star Bharat Bala.

Bala’s journey began in Mumbai’s dynamic food scene, where he earned his culinary degree, and honed his skills across a spectrum of cuisines — from Chinese to Mediterranean. His talent caught the attention of Singhal through mutual friends, and after a single meeting in Dallas, Singhal knew Bala was something special.

With its mix of food, culture, and community, Dulce Nina is a destination. And just in time for summer nights in the Cedars.
