For 15 years, Texas Cook’Em has evolved from a simple backyard-style BBQ cookout into one of the largest Independence Day celebrations in South Texas. This year, the beloved tradition returns to Edinburg with another huge event, bringing together championship barbecue, family entertainment, live music, fireworks, and thousands of visitors for a full day of festivities and loads of fun.
Scheduled for July 4, 2026, at Ebony Hills Golf Course in Edinburg, Texas, Cook’Em: High Steaks is expected to attract more than 12,000 attendees. Admission remains free, continuing a tradition that has made the event a favorite among families throughout the Rio Grande Valley.
Texas Cook’Em is a sanctioned barbecue competition featuring some of the region’s top pitmasters. The event is recognized by both the Central Texas Barbecue Association (CBA) and the Steak Cookoff Association (SCA), drawing serious competitors seeking championship honors and qualifying opportunities.
Competition categories include chicken, ribs, brisket, and steak, with judging taking place throughout the day before champions are crowned during the evening awards ceremony. Young cooks will also have their chance to shine through the popular H-E-B Kids Cook’Em competition.
While the barbecue pits are firing up, festivalgoers can enjoy a packed schedule of activities designed for all ages. The festival grounds open at 4 p.m. and feature the Omar Ochoa Law Firm Family Fun Zone, a Cars and Stripes car show, cornhole competitions, food vendors, and community exhibits.
Live entertainment will keep the energy high throughout the evening. Visitors can also watch the Freedom Jump Skydive Show and the Edinburg Night of Champions before the night concludes with one of the region’s most anticipated fireworks displays.
As darkness falls, attention turns skyward for the H-E-B Sizzle and Stripes Firework Show, which begins at 10 p.m. The annual display has become a signature part of Texas Cook’Em, drawing families from across South Texas to celebrate Independence Day together. The grounds close at 11:30 p.m.
A sense of community fueled the event’s growth over the past decade and a half. What began as a local cookout has evolved into a regional tradition that showcases South Texas hospitality, local talent, and a shared love of great food.
