Legacy West welcomes Uchiko, which opened on June 18, 2024. Uchiko, child of Uchi, is the offspring of James Beard Award‑winning Chef Tyson Cole’s original Japanese concept.
Cole’s skills, experience, and knowledge grows as he continues to be an enthusiastic student of the Japanese tradition and one of the few American sushi masters. He and the whole Uchi culinary team continue research and experimenting daily at the Uchi family restaurants, bringing the best of Japanese to customers. Cole trained for over a decade under two distinct sushi masters in Tokyo, New York, and Austin.
The award‑winning Uchi was opened by Chef Tyson Cole in 2003 in a refurbished old home in South Austin. Uchi is now located in five cities with plans to expand into more markets in the future. In 2010, uchiko, “child of Uchi,” launches as an extension of the Uchi experience, matching Uchi’s dedication to food, service, and design and boasting strong culinary talent. In 2018, launch of uchiba, Uchi’s first bar concept, located on the second floor of Uchi Dallas, expanded elements of Uchi into a cocktail experience.
Customers at the Legacy West restaurant may relish restaurant-exclusive menu items like the “From the Earth” section at Uchiko. An array of hot and cold smoking and curing techniques are used in “From the Earth” dishes to add a smokey, charred flavor to meat, fish, and vegetables. There is also a special “From the Earth” named “From the Table” at the Plano site. Larger-sized dishes are packed with sides so that everyone at the table can eat and enjoy them together. Dishes including whole branzino, 45-day dry-aged cowboy ribeye, and bone-in short rib are among the selections of “From the Table.”

The broad range of drinks at Uchiko includes beer, wine, zero proof drinks, and traditional cocktails, and, of course, Japanese sakes and whisky.
The apple tatin and the lychee coconut sundae, two new and delicious items offered for dessert, can be enjoyed at the Plano location.
