One of Texas’ most recognizable pitmasters is taking a new direction rooted in Southern comfort food and family style dining.
Scott Roberts, the longtime pitmaster of the legendary Salt Lick BBQ, is preparing to soon open Roxie’s, a new restaurant in Buda that trades brisket and sausage for fried chicken, mashed potatoes, and the kind of food that belongs on a family dinner table.
The restaurant, named after Roberts’ grandmother Roxanna, is deeply personal. Roxie’s is inspired by the meals she cooked and the way she brought people together with hearty food and plenty of room at the table. The concept focuses on classic Southern dishes served in a family-style format.
Roxie’s is located in the Buda Mill & Grain Co. building, a historic agricultural complex in Buda, Texas. While the setting is steeped in history, the goal is to make the restaurant feel lived-in and welcoming, more like a Sunday family-style dinner than a night out.
In addition to the comfort-forward menu, the restaurant will feature a full bar, including a signature margarita inspired by Roxanna’s bold personality.
The menu includes appetizers, such as pimento cheese crocks and deviled eggs topped with fried chicken bites, crispy and golden fried chicken, chicken fried steak, and chargrilled steak. Dessert pies are all inspired by Roxie’s original recipes. The bar will also include margaritas and frozen peach Bellinis.

While Roxie’s marks a departure from smoked meats, it carries the same philosophy that made Salt Lick famous: simple food done right, served with warmth and generosity.
Set to open in late January 2026, Roxie’s is already drawing attention as it recreates the feeling of home, one plate at a time.
