A new dining destination named The Gibson opened its doors in November, taking over the space formerly occupied by Maguire’s Bistro & Bar at 17552 North Dallas Parkway.
Owned by husband-and-wife team Carl Britton and Carrie Britton, longtime restaurateurs behind a fine-dining spot in Lubbock and other ventures, The Gibson infuses Dallas with upscale sophistication, juicy prime steaks, and much more.
The road to opening wasn’t smooth. During renovation in 2023, the building was targeted by thieves causing extensive destruction. Insurance didn’t cover the losses, but rather than abandoning the project, they rose above the challenge. They rebuilt the space entirely, creating a sleek, glamorous aesthetic with a Dallas-twist vibe.
The Gibson greets guests with bold Art Deco design, fitted with dark polished surfaces, bronze accents, sweeping lines, and vintage-style chandeliers. The centerpiece is a dramatic central bar, surrounded by warm, moody lighting.
Expect the menu to offer hearty, steak classics. There are cuts like ribeye, NY strip, filet, and even a tomahawk meant for two. Customers can also find burgers, seafood, vegetarian risotto, and dishes like sea bass served with a white-chocolate strawberry beurre blanc.

Appetizers range from crab cakes and deviled eggs to shrimp cocktail, and crispy pickles and Havarti cheese. Salads make a healthy start, including a wedge salad, Caesar salad, and pear and pecan salad.
One of The Gibson’s standout features is its expansive wine selection. Co-owner Carrie Britton brings a formal certification from the Court of Master Sommeliers and additional French wine-scholar credentials, knowledge that helped her build a list that includes rare, hard-to-find bottles.
Lunch service is reportedly in planning mode, so The Gibson could soon evolve from a dinner-only destination into an all-day spot.
