A buzzworthy new pizza concept galloped into Fort Worth’s South Main Village, and it promises pizza, martinis, and a laid-back neighborhood atmosphere. The new pizza joint called One Trick Pony Pizza Tavern sits at 313 S. Main St., bringing a new vibe and crispy crusts to the popular address that features exposed brick and steel beams.
The new pizza tavern is the latest project from Travis and Emma Heim, the powerhouse duo behind Heim Barbecue, one of Fort Worth’s most beloved culinary success stories. The Heims launched Heim BBQ from a food truck in 2016, building it into a barbecue empire known for craft meats and long lines. In early 2024, they stepped away from daily operations, passing the torch to their partner Will Churchill to spend more time with family.
Though the Heims are known for brisket, Heim beast rib, and bacon burnt ends, Travis honed another culinary obsession with creating delicious tavern-style pizza. Thanks to a pizza oven tucked inside their Heim commissary kitchen, he’s spent the past six years experimenting with dough, sauce, and toppings, and his staff became the first taste testers.
One Trick Pony plans to offer two styles of pizza, the New York-Style, but crispier and thinner than the classic slice, and Chicago tavern-style, which has always been popular among pizza enthusiasts. This tavern-style pizza is ultra-thin and crunchy, cut into squares, and loaded with toppings to the edge with no crust visible. Future plans consist of hoagie rolls and pizza buns, and maybe even sandwiches.
Initially, One Trick Pony will focus on dinner and late-night service, with lunch hours and a hoagie lineup coming soon. Expect cocktails like expertly made martinis and a wine list, as well as drinks that are paired well with a pizza slice.
