New Austin Food Truck Blends Nashville-Style Hot Chicken with Mexican Heat

The team behind the beloved taco brand Veracruz All Natural is turning up the temperature with a fiery new concept. Diablo Hot Chicken, a new food truck opening soon in Austin, fuses the traditions of Southern fried chicken with the bold flavors of Mexican chiles.

Slated to open on March 12, 2026, in East Austin, Diablo Hot Chicken will serve Nashville hot chicken blended with Mexican hot chiles. For sisters Reyna Vazquez and Maritza Vazquez, the founders of Veracruz All Natural, the new concept is an exciting twist on their roots.

Their journey began in 2008 with a single food truck in Austin, serving tacos that quickly built a devoted following. Over the years, that small operation grew into one of the city’s most recognizable Mexican food brands.

With Diablo Hot Chicken, the sisters are going back to the food truck format that started it all, but with a much spicier theme.

The seasoning at Diablo Hot Chicken draws from a lineup of Mexican chiles, including piquƭn, Ɣrbol, morita, and guajillo, creating a heat profile that moves beyond simple burn. Instead, diners can expect smoky, earthy, and slightly fruity notes layered over crunchy fried chicken. Customers can choose their spice adventure, ranging from mild to extreme heat.

Like many great food trucks, Diablo Hot Chicken keeps the menu focused. The stars are crispy fried chicken sandwiches and tenders, served with classic sides like macaroni salad, broccoli salad, and hand-cut fries. Even the bun gets special treatment, baked by the Veracruz team to complement the spicy chicken.

Diablo will operate from an East Austin food truck park near an existing Veracruz location; a reminder of how far the brand has come since its humble beginnings.
