Fort Worth Gains a Mexican Food Truck Gem from a Popular Chef

Flama Blanca may be small, but its ambitions are large. The sleek new food trailer, which quietly rolled into Fort Worth in December is the first solo venture for chef Jake Morgan, a Tarrant County native with nearly 20 years of experience in high-end kitchens. Parked behind the Tulips building and sharing a courtyard with the Low Doubt Bar, Flama Blanca is gaining a following, attracting diners craving something bold, authentic, and flavorful.

For Morgan, the trailer represents a creative and professional turn. Known for his tenure as executive chef at Plank Provisions in The Shops at Clearfork, Morgan is focused on delivering high quality, modern bar food with a Mexican-inspired edge.

A good example is Flama Blanca’s standout item, the chorizo burger. A 100% chorizo patty is reimagined as it heats up on a flat-top grill, then the patty gets layered with crispy mozzarella, bacon, tequila-caramelized onions, and matcha aioli.

The rest of the menu is equally delicious and full-flavored. Street tacos feature achiote-marinated grilled chicken, house-spiced steak, carnitas, and al pastor. An elote salad combines roasted corn, pickled red onions, cotija cheese, and poblano dressing into a flavorful cup that’s become a go-to side. Don’t miss dessert, which is a house-made churro that’s already building a loyal following.

Vegetarian and vegan diners aren’t treated as an afterthought, thanks to soy-based al pastor tacos that deliver the same depth of flavor as their meat counterparts.

Flama Blanca is the culmination of a career spent learning the business from the inside out. Raised in Arlington, Morgan sharpened his skills at Truluck’s before moving into leadership roles with Fox Restaurant Group and Flagship Restaurant Group, where he worked as both an executive chef and corporate trainer. After helping open Plank Seafood in Austin, he returned to Fort Worth with a clear goal to build something of his own, on his own terms.

Even the trailer’s name carries personal meaning. ā€œFlama Blanca,ā€ which translates to ā€œwhite flame,ā€ is a nod to Morgan’s former kitchen crew at Plank, who regularly commented on the intense heat of his grills.

Just weeks into operation, repeat customers and enthusiastic word-of-mouth have confirmed Morgan is onto something special.
